Glucoamylase GA-8000FG is a high concentrated powder produced from selected strains of Aspergillus niger through submerged fermentation, extraction, and refining processes.
GA-8000FG offers the following Benefits to baking industry:
> Increase glucose content in flours, thus providing sufficient nutrients for yeast fermentation;
> Conducive to Maillard reaction, improve the skin color and flavors of bread;
> Enhance dough fermentation ability to produce biogas, and magnify loaf volume.
> Can be used in frozen dough and promote yeast fermentation.
Effect of pH
The effective pH range for GA-8000FG is 3.0 to 5.5. For maximum activity, the optimal pH is from 3.5 to 4.5.
Effect of temperature
The effective temperature range for GA-8000FG is 30 to 65ºC. The optimal temperature range is 55 to 60°C.
Packaging, Storage & Shelf-life
- Standard packaging is 20kg kraft paper bags, or 20kg cardboard drums with inner food-grade plastic bags. Customized packaging is available upon request.
- Typical shelf-life is 24 months at 0∼25°C in its original packaging, sealed and unopened, protected from direct sunlight.
- Keep at clean, cool, and dry storage room. Prolonged storage and/or adverse conditions such as humidity and higher temperatures may lead to a higher dosage requirement.
Safe Handling of Enzymes
Inhalation of enzyme dust and mists should be avoided. In case of contact with skin or eyes, promptly rinse with water for at least 15 minutes. For detailed handling information, please refer to the Safety Data Sheet.
