Product Description

JP-100 is a food-grade alkaline protease produced from strains of Bacillus licheniformis through submerged fermentation, extraction and refining process. DJP-100 can catalyze the hydrolysis of proteins under alkaline conditions. It is suitable for the food and brewing industry, and also applicable for leather processing, silk degumming and the production of detergents.

Effect of pH
DJP-100 can work at pH from 6 to 12 with its optimal pH from 10 to 11.

Effect of Temperature
DJP-100 can work from 30 to 60°C, with its optimal temperature ranges from 45 to 55°C.

Applications and Benefits
  • DJP-100 is applied to the hydrolysis of animal and plant proteins in the food industry to produce peptides or amino acids to form protein hydrolysates with unique flavor and improve the nutritional value of proteins.
  • In the production of condiments, DJP-100 can increase the content of amino acids in condiments and improve the flavor.
  • In the production of chondroitin, DJP-100 can help to increase the yield and purity.
  • In the production of heparin sodium, DJP-100 can improve the molecular uniformity and product purity. 
  • In leather processing, DJP-100 can help to simplify and shorten the process,  improve the quality of the finished product, increase the yield, and reduce the cost. 
  • In silk degumming, DJP-100 can protect the silk from damage and hairiness, and make it more fluffy. After the raw materials are pretreated, the enzyme is added at a dosage level of  0.8~2.4% at pH 9~11, and it acts for 30~60 minutes at 40~50ºC.
  • In detergents, DJP-100 can greatly improve the decontamination effect. The dosage rate is 0.2~1% on the mass of the detergent.
Packaging, Storage & Shelf-Life
  •  30kg HDPE drums or 1125 kg IBC totes. Customized packaging is also available upon request.
  • Typical shelf-life is 12 months provided it is stored at 010°C in its original packaging, sealed and unopened, protected from direct sunlight.
  • Prolonged storage and/or adverse conditions such as higher temperatures may lead to a higher dosage requirement, therefore should be avoided.

Safety & Enzyme Handling
Inhalation of enzyme dust and mists should be avoided. In case of contact with skins or eyes, promptly rinse with water for at least 15 minutes. For detailed handling information, please refer to the Safety Data Sheet.
